Cut The CARBS – Stuffed Acorn Squash Recipe

Are you looking to prepare something tasty this weekend? Good tasting food doesn’t have to violate your diet. With the rise of the internet we have unlimited access to all types of foods and there are some really good alternatives out there. Today we take a look at a diet from the popular Paleo diet. The Paleo diet is based on food types that are assumed to have been eaten by our early ancestors. Mainly consisting of meat, fish, vegetables, and fruits, the Paleo diet can be a great source of delicious nutrition.

Fall is just about here and with that comes acorn squash. Add some variety to your diet with this great recipe from StupidEasyPaleo.com.

What You Need:

  • Acorn Squash
  • 1 pound Ground Beef
  • 1 Onion
  • 1 Apple
  • 6 slices of bacon
  • 1 Tbsp Rosemary
  • 2 tsp Thyme
  • 1 tsp Sage
  • 1 tsp Black Pepper
  • ½ tsp Cinnamon
  • ½ tsp Sea Salt
  • ¼ tsp Nutmeg

What to do:

  1. Preheat the oven to 375ºF.
  2. Cut the Squash in half then take the seeds out. Place on baking sheet lined with foil.
  3. Roast until flesh is tender or around 45-50 minutes.
  4. Let cool. About 10 minutes.

Work smart, while that part is being done do the next few steps:

  1. Dice apple, onion and bacon.
  2. In large skillet brown the bacon, then throw in onions for 5-10 min (they will become translucent), then throw apples in for another 5-10 min.
  3. Remove the mixture and using the same skillet add ground beef and let it brown.
  4. Add all the spices. Mix then remove and add to the bacon/apple/onion mixture.
  5. When the squash is cool to the touch use a scooper to take out some of the flesh. Don’t wait too long or it will get hard.
  6. Throw it in with the beef and mix.
  7. Put it all in the squash boats.
  8. Place in oven at 375ºF for 15 minutes until it is heated.
